This treat is fun to make and adds a festive look to a holiday feast! There is no baking, making this an easy, fast and delicious treat. Enjoy the health benefits of increased energy and reduced sugar cravings by eating one of these “snowballs”!

Ingredients:

1 c. powdered, unsweetened baking chocolate or cacao
¾ c. unsweetened peanut butter or almond butter
½ c. raw honey
¼ c. coconut manna, warmed to creamy consistency (optional)
1 – 2 cups shredded unsweetened coconut
1 c. finely chopped walnuts (optional)

Directions:
Combine cocoa powder, nut butter, ½ c. coconut, ¼ chopped nuts, honey and coconut manna together in food processor or mixer; mix well to form a large ball. Ball is then kneaded between hands until all ingredients meld together. Consistency will be dry, but moist enough to form into smaller balls without sticking to hands. Scoop by tablespoon or use small melon ball scoop; roll in hands to form ball; in separate bowls of shredded coconut and/or walnuts, roll each ball to coat. Place in single layer in storage container and put in refrigerator until firm. Store covered in refrigerator or freezer; bring to room temperature to serve.

Yield: 1 ½ dozen, 1” balls

Notes:
Coconut manna is made from dried coconut that is 12% fiber, 9% protein, 60% MCT (medium chain fatty acids), no trans-fats and is similar to coconut butter or coconut cream; it can be used as a replacement for cream or butter.

Honey is an enzyme rich food containing B vitamins, minerals, and iron. Use local, raw honey whenever possible.

Cacao as nibs or powdered as baking cocoa come from whole cacao beans of which chocolate is made. Generally less processed that other chocolate products, cacao contains more of the antioxidant nutrients that give chocolate benefit to the body.
